Delight in this easy recipe for Pistachio Croissants, a delicious pastry filled with a nutty pistachio mixture.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup cold water
  • 1/2 cup pistachios, shelled and finely chopped
  • 1/4 cup powdered sugar
  • 1/4 teaspoon almond extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large mixing bowl, combine the flour, salt, and sugar. Mix well.
  2. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, mixing until a dough forms. Do not overmix. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  4. On a lightly floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick. Fold the dough into thirds like a letter, then roll it out again into a rectangle. Repeat this process two more times to create layers.
  5. Roll the dough into a large rectangle one last time. Cut the rectangle into triangles (about 4 inches wide at the base).
  6. In a small bowl, mix the chopped pistachios, powdered sugar, and almond extract. Place a spoonful of the pistachio mixture at the base of each triangle.
  7. Starting from the base, roll each triangle tightly towards the tip to form a croissant shape. Place the croissants on a baking sheet lined with parchment paper.
  8. Preheat the oven to 375°F (190°C). Brush the tops of the croissants with the beaten egg.
  9. Bake for 15-20 minutes or until golden brown. Allow to cool slightly before serving.

Notes

  • For an extra touch, sprinkle some chopped pistachios on top of the croissants before baking for added crunch.
  • Substitute almond extract with vanilla extract for a different flavor profile.
