Ingredients

- 1 cup water
- 1/2 cup freshly squeezed lemon juice (about 3–4 lemons)
- 1/4 cup unsweetened cranberry juice
- 1/4 cup erythritol or your preferred sugar substitute
- 2 tablespoons gelatin powder
- 1/4 teaspoon salt
- 1/4 teaspoon lemon zest (optional)
- 1/4 teaspoon food coloring (optional, for a vibrant pink hue)
Instructions
- In a medium saucepan, combine the water, lemon juice, cranberry juice, erythritol, and salt.
- Heat over medium heat until the erythritol is fully dissolved, stirring occasionally.
- Once the mixture is heated, remove it from the heat and slowly sprinkle the gelatin powder over the liquid, whisking continuously to prevent clumps from forming.
- Continue whisking until the gelatin is completely dissolved.
- If using, add the lemon zest and food coloring, stirring until well combined.
- Pour the mixture into silicone gummy molds or a shallow dish.
- Refrigerate for at least 2-3 hours or until fully set.
- Once set, remove the gummies from the molds or cut them into squares if using a dish.
- Store the gummies in an airtight container in the refrigerator for up to 2 weeks.
Notes
- For a tropical twist, substitute half of the lemon juice with lime juice.
- To enhance the flavor, consider adding a few drops of lemon or citrus essential oil before pouring into molds.
