A refreshing and spicy Pineapple Chipotle Salsa that combines sweet pineapple with smoky chipotle peppers, perfect for dipping or as a topping.
Ingredients

- 1 cup fresh pineapple, diced
- 1 medium red onion, finely chopped
- 1 medium red bell pepper, diced
- 1–2 chipotle peppers in adobo sauce, minced (adjust to taste)
- 2 tablespoons fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon garlic powder
- Salt to taste
Instructions
- In a medium bowl, combine the diced pineapple, chopped red onion, and diced red bell pepper.
- Add the minced chipotle peppers, lime juice, chopped cilantro, and garlic powder to the bowl.
- Mix all the ingredients together until well combined. Season with salt to taste.
- Cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips or as a topping for grilled meats and tacos.
Notes
- For a sweeter salsa, add a tablespoon of honey or agave syrup.
- Try adding diced jalapeños for an extra kick of heat.
