A delightful cake infused with the flavors of Earl Grey tea and lavender, perfect for any occasion.

- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup brewed Earl Grey tea, cooled
- 2 tablespoons culinary lavender, finely chopped
- 1 cup buttermilk
- For the Lavender Earl Grey Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tablespoons brewed Earl Grey tea, cooled
- 1 tablespoon culinary lavender, finely chopped
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk and brewed Earl Grey tea. Begin and end with the flour mixture. Mix until just combined.
- Gently fold in the chopped lavender. Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat the softened butter in a mixing bowl until creamy. Gradually add the powdered sugar, mixing on low speed until combined.
- Add the brewed Earl Grey tea and chopped lavender, mixing until smooth. If the frosting is too thick, add milk a tablespoon at a time until desired consistency is reached.
- Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, then place the second layer on top. Frost the top and sides of the cake.
- Chill the cake in the refrigerator for at least 30 minutes before serving to set the frosting.
Notes
- For a lighter version, substitute half of the butter with applesauce.
- For an extra floral note, add a few drops of lavender extract to the frosting.
