  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup brewed Earl Grey tea, cooled
  • 2 tablespoons culinary lavender, finely chopped
  • 1 cup buttermilk
  • For the Lavender Earl Grey Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons brewed Earl Grey tea, cooled
  • 1 tablespoon culinary lavender, finely chopped
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk and brewed Earl Grey tea. Begin and end with the flour mixture. Mix until just combined.
  6. Gently fold in the chopped lavender. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. For the frosting, beat the softened butter in a mixing bowl until creamy. Gradually add the powdered sugar, mixing on low speed until combined.
  9. Add the brewed Earl Grey tea and chopped lavender, mixing until smooth. If the frosting is too thick, add milk a tablespoon at a time until desired consistency is reached.
  10. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, then place the second layer on top. Frost the top and sides of the cake.
  11. Chill the cake in the refrigerator for at least 30 minutes before serving to set the frosting.

Notes

  • For a lighter version, substitute half of the butter with applesauce.
  • For an extra floral note, add a few drops of lavender extract to the frosting.
