Instructions

- Let the mixture sit for about 10 minutes, then whisk again to prevent the chia seeds from clumping together.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
- Once the chia pudding has set, gently fold in the diced peaches.
- Serve the pudding in individual bowls or jars, topped with granola and fresh mint leaves if desired.
