Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the strawberries, blueberries, raspberries, and blackberries. Gently toss the berries together to mix them evenly.
  2. In a small bowl, whisk together the honey, lemon juice, and vanilla extract until well combined.
  3. Drizzle the honey mixture over the berry mixture and gently toss to coat all the berries evenly.
  4. Add the chopped mint leaves and give the salad one last gentle toss.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
