Description
Pancetta Avocado Soldiers are a delicious breakfast delight featuring crispy pancetta, creamy avocado, and soft-boiled eggs served with toasted whole grain bread.

- 2 ripe avocados
- 4 ounces pancetta, diced
- 4 large eggs
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh chives (optional)
- 4 slices of whole grain bread
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Spread the diced pancetta on the prepared baking sheet and bake for about 15 minutes, or until crispy. Remove from the oven and set aside.
- While the pancetta is baking, bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove the eggs and place them in an ice bath to stop the cooking process.
- While the eggs cool, toast the slices of whole grain bread until golden brown.
- Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with lemon juice, salt, and pepper to taste.
- Once the eggs are cool, gently peel them and set aside.
- To assemble, spread the mashed avocado on the toasted bread, top with crispy pancetta, and serve with the soft-boiled eggs for dipping. Optionally, sprinkle with chopped chives for added flavor.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the avocado mixture.
