Description

Pancetta Avocado Soldiers are a delicious breakfast delight featuring crispy pancetta, creamy avocado, and soft-boiled eggs served with toasted whole grain bread.


Ingredients

  • 2 ripe avocados
  • 4 ounces pancetta, diced
  • 4 large eggs
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh chives (optional)
  • 4 slices of whole grain bread

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread the diced pancetta on the prepared baking sheet and bake for about 15 minutes, or until crispy. Remove from the oven and set aside.
  3. While the pancetta is baking, bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove the eggs and place them in an ice bath to stop the cooking process.
  4. While the eggs cool, toast the slices of whole grain bread until golden brown.
  5. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with lemon juice, salt, and pepper to taste.
  6. Once the eggs are cool, gently peel them and set aside.
  7. To assemble, spread the mashed avocado on the toasted bread, top with crispy pancetta, and serve with the soft-boiled eggs for dipping. Optionally, sprinkle with chopped chives for added flavor.

  • For a spicy kick, add a pinch of red pepper flakes to the avocado mixture.
