A delicious and easy recipe for Pad See Ew, a popular Thai stir-fried noodle dish.

- 8 ounces wide rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers (any color)
- 1 large egg
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sugar
- 1/2 teaspoon black pepper
- 2 green onions, chopped
Instructions
- Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the broccoli, carrots, and bell peppers to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to one side of the skillet. Crack the egg into the empty side and scramble it until fully cooked.
- Add the drained noodles to the skillet along with the soy sauce, oyster sauce, sugar, and black pepper. Toss everything together and stir-fry for another 2-3 minutes until heated through and well combined.
- Remove from heat and stir in the chopped green onions. Serve hot.
Notes
- For added protein, include sliced chicken, beef, or tofu. Cook the protein before adding the vegetables.
- Customize the vegetables based on your preference; snap peas, bok choy, or mushrooms work well in this dish.
