- 1 cup polenta (cornmeal)
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Zest of 1 large orange
- 1/2 cup freshly squeezed orange juice
- 1 cup almond flour
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium saucepan, bring the water to a boil. Add the salt, then gradually whisk in the polenta. Reduce the heat to low and cook, stirring frequently, for about 5-7 minutes until thickened. Remove from heat and let cool slightly.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix in the baking powder, orange zest, and orange juice until well combined.
- Gradually fold in the cooled polenta and almond flour until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
Notes
- For a more intense orange flavor, add an extra tablespoon of orange zest or a splash of orange liqueur to the batter.
- Serve the cake with a dollop of whipped cream or a scoop of vanilla ice cream for an indulgent dessert.
