  • Zest of 1 large orange
  • 1/2 cup freshly squeezed orange juice
  • 1 cup almond flour
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium saucepan, bring the water to a boil. Add the salt, then gradually whisk in the polenta. Reduce the heat to low and cook, stirring frequently, for about 5-7 minutes until thickened. Remove from heat and let cool slightly.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the baking powder, orange zest, and orange juice until well combined.
  6. Gradually fold in the cooled polenta and almond flour until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
