Ingredients

  • 1 cup coconut cream
  • ½ cup maple syrup
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cardamom
  • ½ teaspoon salt
  • 1 cup pitted dates
  • 1 cup rolled oats
  • ¼ cup coconut oil, melted
  • ½ cup shredded coconut (unsweetened)

Instructions

  1. Start by preparing the crust. In a food processor, combine the pitted dates, rolled oats, and melted coconut oil. Process until the mixture is well combined and sticky. Press the mixture evenly into the bottom of a lined 8×8-inch baking dish to form the crust. Place in the freezer while you prepare the filling.
  2. In the same food processor, add the soaked cashews, coconut cream, maple syrup, lemon juice, vanilla extract, ground cardamom, and salt. Blend until smooth and creamy, scraping down the sides as needed. This may take a few minutes to achieve a silky texture.
  3. Once the filling is smooth, pour it over the crust in the baking dish, spreading it evenly. Sprinkle the shredded coconut on top for added texture and flavor.
  4. Cover the dish with plastic wrap or a lid and place it in the freezer for at least 4 hours, or until firm.
  5. Once set, remove the cheesecake bars from the freezer and let them sit at room temperature for about 10 minutes before slicing into squares.
