- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup almond butter (or peanut butter)
- 1/2 cup honey or maple syrup
- 1/2 cup fresh raspberries (mashed)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey (or maple syrup), mashed raspberries, vanilla extract, and salt. Mix well until all ingredients are fully combined and form a sticky mixture.
- If the mixture is too sticky, you can add a little more shredded coconut or oats to help it hold together.
- Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used up.
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate the balls for at least 30 minutes to firm up.
- Once chilled, enjoy immediately or store in an airtight container in the refrigerator for up to one week.
Notes
- For a chocolate twist, add 1/4 cup of cocoa powder to the mixture or dip the finished balls in melted dark chocolate.
- Substitute the raspberries with other berries like blueberries or strawberries for a different flavor profile.
