Description
A delightful and healthy recipe for matcha bites inspired by my Japanese grandma’s secret recipe.
Ingredients
Scale
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 2 tablespoons matcha powder
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 cup dark chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the almond flour, coconut flour, matcha powder, and salt. Mix well until evenly combined.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms. If using, fold in the dark chocolate chips.
- Scoop out tablespoon-sized portions of the dough and roll them into balls. Place the balls on a parchment-lined baking sheet.
- Refrigerate the matcha bites for at least 30 minutes to firm up.
- Once chilled, enjoy your matcha bites as a healthy snack or dessert!
Notes
- For a nut-free version, substitute almond flour with sunflower seed flour.
- Add a pinch of sea salt on top of each bite before chilling for an extra flavor boost.
