Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 2 tablespoons matcha powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the almond flour, coconut flour, matcha powder, and salt. Mix well until evenly combined.
  2. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until a dough forms. If using, fold in the dark chocolate chips.
  4. Scoop out tablespoon-sized portions of the dough and roll them into balls. Place the balls on a parchment-lined baking sheet.
  5. Refrigerate the matcha bites for at least 30 minutes to firm up.
  6. Once chilled, enjoy your matcha bites as a healthy snack or dessert!

Notes

  • For a nut-free version, substitute almond flour with sunflower seed flour.
  • Add a pinch of sea salt on top of each bite before chilling for an extra flavor boost.
