Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 cups vegetable broth
  • 2 cups mushrooms, sliced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add mushrooms, carrots, and celery, cooking until tender.
  4. Stir in wild rice, broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Stir in heavy cream before serving.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
