A creamy and hearty soup made with wild rice and mushrooms.
Ingredients

- 1 cup wild rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 cups vegetable broth
- 2 cups mushrooms, sliced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add mushrooms, carrots, and celery, cooking until tender.
- Stir in wild rice, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in heavy cream before serving.
Notes
- For a vegan version, substitute heavy cream with coconut milk.
- This soup can be stored in the refrigerator for up to 5 days.
