- 1 cup panko breadcrumbs

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix panko breadcrumbs, chopped herbs, minced garlic, salt, and pepper.
- Brush the venison loin with olive oil, then smear with Dijon mustard.
- Coat the loin with the breadcrumb mixture, pressing it onto the meat.
- Place the coated loin on a baking sheet and roast for 25-30 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Let rest for 10 minutes before slicing and serving.
