Ingredients

  • 4 cups cubed ripe melon (such as cantaloupe or honeydew)
  • 1 cucumber, peeled and diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 cups cold vegetable broth
  • 1/4 cup lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a blender, combine the cubed melon, cucumber, bell pepper, red onion, and vegetable broth.
  2. Blend until smooth and creamy.
  3. Add the lime juice, salt, black pepper, and olive oil; blend again to combine.
  4. Taste and adjust seasoning if necessary.
  5. Chill in the refrigerator for at least 1 hour before serving.
