A refreshing and unique cold soup made with ripe melons, perfect for hot summer days.
Ingredients

- 4 cups cubed ripe melon (such as cantaloupe or honeydew)
- 1 cucumber, peeled and diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 cups cold vegetable broth
- 1/4 cup lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a blender, combine the cubed melon, cucumber, bell pepper, red onion, and vegetable broth.
- Blend until smooth and creamy.
- Add the lime juice, salt, black pepper, and olive oil; blend again to combine.
- Taste and adjust seasoning if necessary.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve chilled, garnished with additional diced vegetables if desired.
Notes
- For a spicier kick, add a jalapeño or hot sauce.
- This dish can be made a day in advance for enhanced flavors.
