Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened butter and confectioners’ sugar, beating until airy and pale.
- Stir in the vanilla and almond essences until fully incorporated.
- Gradually sift in the flour and sea salt, mixing gently until the dough comes together.
- Fold in the finely chopped pistachios until evenly mixed.
- Scoop out portions of the dough using a tablespoon and roll them into small spheres.
- Arrange the dough balls on the prepared baking sheet, spaced about 2 inches apart.
- Bake in the preheated oven for 12 to 15 minutes, or until the bottoms are just golden.
- Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust the cooled cookies lavishly with confectioners’ sugar before serving.
