Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tablespoon matcha powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen raspberries (for the jam)
  • 2 tablespoons chia seeds (for the jam)
  • 2 tablespoons honey or maple syrup (for the jam)
  • 1 teaspoon lemon juice (for the jam)

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, matcha powder, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Using your thumb or the back of a spoon, create an indentation in the center of each cookie.
  7. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. While the cookies are cooling, prepare the raspberry chia jam. In a small saucepan over medium heat, combine the raspberries, chia seeds, honey (or maple syrup), and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the raspberries break down and the mixture thickens. Remove from heat and let cool.
  9. Once the cookies are completely cool, fill each thumbprint with a spoonful of raspberry chia jam.

Notes

  • This recipe makes about 24 cookies.
  • For added flavor, try substituting the raspberry jam with strawberry or blueberry jam.
  • You can also add a sprinkle of sea salt on top of the cookies before baking for a sweet and salty contrast.
