Matcha Thumbprint Cookies with Raspberry Chia Jam delightfully blend flavors!

- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1 tablespoon matcha powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen raspberries (for the jam)
- 2 tablespoons chia seeds (for the jam)
- 2 tablespoons honey or maple syrup (for the jam)
- 1 teaspoon lemon juice (for the jam)
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, almond flour, matcha powder, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Using your thumb or the back of a spoon, create an indentation in the center of each cookie.
- Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies are cooling, prepare the raspberry chia jam. In a small saucepan over medium heat, combine the raspberries, chia seeds, honey (or maple syrup), and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the raspberries break down and the mixture thickens. Remove from heat and let cool.
- Once the cookies are completely cool, fill each thumbprint with a spoonful of raspberry chia jam.
Notes
- This recipe makes about 24 cookies.
- For added flavor, try substituting the raspberry jam with strawberry or blueberry jam.
- You can also add a sprinkle of sea salt on top of the cookies before baking for a sweet and salty contrast.
