- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 tablespoon matcha green tea powder
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the matcha powder and vanilla extract until fully combined.
- Gradually add the dry ingredients to the butter mixture, alternating with the whole milk. Start and end with the flour mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a teaspoon of almond extract along with the vanilla.
- You can also top the cooled cake with a light glaze made from powdered sugar and lemon juice for a citrusy twist.
