Ingredients

  • 1/4 cup maple syrup
  • 2 tablespoons matcha powder
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the shredded coconut, almond flour, matcha powder, and salt. Mix well until all dry ingredients are evenly distributed.
  2. Add the maple syrup and vanilla extract to the dry mixture. Stir until the mixture is well combined and forms a sticky dough.
  3. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the balls on a parchment-lined baking sheet.
  4. Refrigerate the coconut balls for at least 30 minutes to firm up.
  5. Once chilled, serve as a snack or dessert. Store any leftovers in an airtight container in the refrigerator for up to one week.
