- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 2 tablespoons matcha powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the shredded coconut, almond flour, matcha powder, and salt. Mix well until all dry ingredients are evenly distributed.
- Add the maple syrup and vanilla extract to the dry mixture. Stir until the mixture is well combined and forms a sticky dough.
- Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the balls on a parchment-lined baking sheet.
- Refrigerate the coconut balls for at least 30 minutes to firm up.
- Once chilled, serve as a snack or dessert. Store any leftovers in an airtight container in the refrigerator for up to one week.
Notes
- For an extra flavor boost, add a tablespoon of nut butter to the mixture before rolling into balls.
- Roll the finished balls in additional shredded coconut or crushed nuts for added texture and presentation.
