- 1/4 cup pure maple syrup or honey
- 2 tablespoons matcha green tea powder
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 1/2 cup unsweetened shredded coconut
- 1/4 cup semi-sweet chocolate chips (optional for drizzling)
Instructions
- Prepare a muffin tin with paper liners or silicone molds for easy removal.
- In a small saucepan, gently heat the coconut oil over low flame until it becomes liquid.
- Remove from heat and mix in the almond butter, sweetener (maple syrup or honey), matcha powder, vanilla extract, and sea salt until smoothly blended.
- Spoon the mixture into the muffin cups, filling them about three-quarters full.
- Top each cup generously with shredded coconut.
- If using chocolate, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Drizzle the melted chocolate over the coconut topping.
- Place the muffin tin in the refrigerator and chill for at least one hour until firm.
- Once set, gently lift the cups out of the tin and enjoy!
