Delicious and healthy Matcha Coconut Almond Butter Cups that are easy to make and perfect for a sweet treat.
Ingredients

- 1 cup almond butter
- 1/2 cup shredded unsweetened coconut
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 tablespoons matcha green tea powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate chips
Instructions
- Line a muffin tin with paper liners.
- In a mixing bowl, combine almond butter, shredded coconut, maple syrup, melted coconut oil, matcha powder, vanilla extract, and sea salt. Mix until smooth and well combined.
- Spoon the mixture evenly into the lined muffin cups, filling each about 2/3 full.
- Place the muffin tin in the freezer for about 30 minutes to firm up.
- While the almond butter cups are chilling, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Once the almond butter mixture is firm, remove the muffin tin from the freezer and spoon a layer of melted chocolate over each cup, covering them completely.
- Return the muffin tin to the freezer for another 15-20 minutes, or until the chocolate is set.
- Carefully remove the cups from the muffin tin and enjoy! Store any leftovers in an airtight container in the refrigerator.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- Add a sprinkle of sea salt on top of the chocolate layer for a sweet and salty flavor contrast.
