Delicious and healthy Matcha Coconut Almond Butter Cups that are easy to make and perfect for a sweet treat.


Ingredients

  • 1 cup almond butter
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 tablespoons matcha green tea powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Line a muffin tin with paper liners.
  2. In a mixing bowl, combine almond butter, shredded coconut, maple syrup, melted coconut oil, matcha powder, vanilla extract, and sea salt. Mix until smooth and well combined.
  3. Spoon the mixture evenly into the lined muffin cups, filling each about 2/3 full.
  4. Place the muffin tin in the freezer for about 30 minutes to firm up.
  5. While the almond butter cups are chilling, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  6. Once the almond butter mixture is firm, remove the muffin tin from the freezer and spoon a layer of melted chocolate over each cup, covering them completely.
  7. Return the muffin tin to the freezer for another 15-20 minutes, or until the chocolate is set.
  8. Carefully remove the cups from the muffin tin and enjoy! Store any leftovers in an airtight container in the refrigerator.

Notes

  • For a nut-free version, substitute almond butter with sunflower seed butter.
  • Add a sprinkle of sea salt on top of the chocolate layer for a sweet and salty flavor contrast.
