  • 1/2 cup milk
  • 1/2 cup diced bell peppers (red and green)
  • 1/2 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a muffin tin with cooking spray or oil.
  3. In a large mixing bowl, whisk together the eggs and milk until well combined.
  4. Add the diced bell peppers, onions, tomatoes, cilantro, cumin, turmeric, chili powder, salt, and black pepper to the egg mixture. Stir until all ingredients are evenly distributed.
  5. Fold in the shredded cheese gently.
  6. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 18-20 minutes, or until the muffins are puffed and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let cool for a few minutes before carefully removing the muffins from the tin.
  9. Serve warm or at room temperature.
