- 6 large eggs
- 1/2 cup milk
- 1/2 cup diced bell peppers (red and green)
- 1/2 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (cheddar or your choice)
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat the oven to 350°F.
- Grease a muffin tin with cooking spray or oil.
- In a large mixing bowl, whisk together the eggs and milk until well combined.
- Add the diced bell peppers, onions, tomatoes, cilantro, cumin, turmeric, chili powder, salt, and black pepper to the egg mixture. Stir until all ingredients are evenly distributed.
- Fold in the shredded cheese gently.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until the muffins are puffed and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool for a few minutes before carefully removing the muffins from the tin.
- Serve warm or at room temperature.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce to the egg mixture.
- You can substitute the vegetables with your favorites, such as spinach or zucchini, for a different flavor profile.
