Instructions
- In a large mixing bowl, combine the crushed graham crackers, powdered sugar, and shredded coconut. Mix well until combined.
- Add the lime juice, tequila, orange liqueur, lime zest, and salt to the dry ingredients. Stir until the mixture is well combined and forms a sticky dough.
- Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes to firm up.
- Once chilled, use your hands to roll the mixture into small balls, about 1 inch in diameter.
- Roll each ball in the coarse sugar to coat evenly.
- Place the finished balls on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.
