  • 1 cup brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.
  2. Using an electric mixer, beat the mixture on medium speed until it forms soft peaks, about 3-4 minutes.
  3. Gently fold the melted white chocolate into the mascarpone mixture until fully incorporated.
  4. In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
  5. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  6. In a 9×9 inch square dish, arrange a layer of soaked ladyfingers at the bottom.
  7. Spread half of the mascarpone mixture over the ladyfingers, then sprinkle half of the fresh raspberries on top.
  8. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  10. Before serving, dust the top with cocoa powder and garnish with additional raspberries if desired.
