- 1 tablespoon coffee liqueur (optional)
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.
- Using an electric mixer, beat the mixture on medium speed until it forms soft peaks, about 3-4 minutes.
- Gently fold the melted white chocolate into the mascarpone mixture until fully incorporated.
- In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
- In a 9×9 inch square dish, arrange a layer of soaked ladyfingers at the bottom.
- Spread half of the mascarpone mixture over the ladyfingers, then sprinkle half of the fresh raspberries on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder and garnish with additional raspberries if desired.
Notes
- For a richer flavor, try adding a layer of chocolate ganache between the mascarpone layers.
- You can substitute the raspberries with strawberries or blueberries for a different fruit twist.
