Ingredients

  • 2 mackerel, cleaned
  • 1 cup animal fat
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup vinegar
  • 1/2 cup water
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • 1 tablespoon salt

Instructions

  1. In a large pan, heat the animal fat over medium heat.
  2. Add the sliced onions and garlic, cooking until softened.
  3. Add the carrots and bell peppers, cooking for another 5 minutes.
  4. Place the cleaned mackerel in the pan.
  5. In a separate bowl, mix vinegar, water, black peppercorns, bay leaf, and salt.
  6. Pour the marinade over the mackerel and vegetables.
  7. Bring to a simmer and cook for about 20 minutes.
  8. Let it cool and refrigerate for at least 2 hours before serving.
