Ingredients

- 2 mackerel, cleaned
- 1 cup animal fat
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup vinegar
- 1/2 cup water
- 1 teaspoon black peppercorns
- 1 bay leaf
- 1 tablespoon salt
Instructions
- In a large pan, heat the animal fat over medium heat.
- Add the sliced onions and garlic, cooking until softened.
- Add the carrots and bell peppers, cooking for another 5 minutes.
- Place the cleaned mackerel in the pan.
- In a separate bowl, mix vinegar, water, black peppercorns, bay leaf, and salt.
- Pour the marinade over the mackerel and vegetables.
- Bring to a simmer and cook for about 20 minutes.
- Let it cool and refrigerate for at least 2 hours before serving.
Notes
- Best served chilled as a salad or side dish.
- Can be stored in the refrigerator for up to a week.
