Instructions
- Mix the almond flour, shredded coconut, powdered erythritol, vanilla extract, and salt in a large bowl until well combined.
- Add the softened cream cheese and almond milk into the dry mixture, stirring until a cohesive dough forms.
- If the mixture appears crumbly, gradually add more almond milk, one tablespoon at a time, until it reaches a smooth consistency.
- Gently incorporate the finely chopped pistachios, ensuring they are evenly mixed throughout the dough.
- For a chocolate variation, blend in the cocoa powder until fully integrated.
- Shape the dough into a cylindrical log on a sheet of parchment paper, approximately 2 inches in diameter.
- Wrap the log in the parchment and place it in the refrigerator for a minimum of 2 hours to firm up.
- After chilling, take the log out, unwrap it, and slice it into 1/2-inch thick pieces.
