Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 8 cups beef or chicken broth
  • 1 pound beef or chicken liver, cleaned and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the broth and bring to a simmer.
  4. Add the chopped liver, thyme, oregano, salt, and pepper. Simmer for 10-15 minutes, or until the liver is cooked through.
  5. Stir in the chopped spinach and lemon juice. Cook for an additional 2-3 minutes until the spinach is wilted.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

  • For a creamier texture, blend a portion of the soup before adding the spinach.
