Liver Loaded Brodo is a nutritious soup packed with the goodness of liver and vegetables, perfect for a healthy meal.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 8 cups beef or chicken broth
- 1 pound beef or chicken liver, cleaned and chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup fresh spinach, chopped
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes, stirring occasionally.
- Pour in the broth and bring to a simmer.
- Add the chopped liver, thyme, oregano, salt, and pepper. Simmer for 10-15 minutes, or until the liver is cooked through.
- Stir in the chopped spinach and lemon juice. Cook for an additional 2-3 minutes until the spinach is wilted.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For a creamier texture, blend a portion of the soup before adding the spinach.
- Add a pinch of red pepper flakes for a spicy kick.
