Ingredients

  • 1 cup cooked lentils, drained and rinsed
  • 1 cup fresh spinach, finely chopped
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coriander
  • 1/2 cup water (adjust as necessary)
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, mix together the cooked lentils, chopped spinach, flour, salt, onion powder, and coriander until well combined.
  2. Slowly pour in the water while stirring, until a cohesive dough begins to form. Adjust with more flour or water as needed.
  3. Transfer the dough to a lightly floured surface and knead for about 5 minutes until it becomes elastic and smooth.
  4. Wrap the dough in plastic wrap or cover it with a damp cloth, allowing it to rest for 20 minutes.
  5. After resting, divide the dough into 4 equal portions and shape each portion into a ball.
  6. Roll each ball out into a thin circle, approximately 1/4 inch thick.
  7. Preheat a non-stick skillet over medium heat and drizzle in 1/2 tablespoon of olive oil.
  8. Place one tortilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and fully cooked.
  9. Repeat the process for the remaining tortillas, adding more oil as needed.
  10. Enjoy these warm tortillas on their own or paired with your favorite salsa or spread.
