- 1 cup cooked lentils, drained and rinsed
- 1 cup fresh spinach, finely chopped
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon coriander
- 1/2 cup water (adjust as necessary)
- 2 tablespoons olive oil
Instructions
- In a large bowl, mix together the cooked lentils, chopped spinach, flour, salt, onion powder, and coriander until well combined.
- Slowly pour in the water while stirring, until a cohesive dough begins to form. Adjust with more flour or water as needed.
- Transfer the dough to a lightly floured surface and knead for about 5 minutes until it becomes elastic and smooth.
- Wrap the dough in plastic wrap or cover it with a damp cloth, allowing it to rest for 20 minutes.
- After resting, divide the dough into 4 equal portions and shape each portion into a ball.
- Roll each ball out into a thin circle, approximately 1/4 inch thick.
- Preheat a non-stick skillet over medium heat and drizzle in 1/2 tablespoon of olive oil.
- Place one tortilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and fully cooked.
- Repeat the process for the remaining tortillas, adding more oil as needed.
- Enjoy these warm tortillas on their own or paired with your favorite salsa or spread.
