A comforting and flavorful lentil dish with a hint of coconut.
Ingredients

- 1 cup red lentils
- 1 can coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 2 cups vegetable broth
- 1 tablespoon olive oil
- Salt to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, and ginger, and sauté until the onion is translucent.
- Stir in curry powder and turmeric, cooking for another minute.
- Add lentils and vegetable broth, bringing to a boil.
- Reduce heat and simmer for about 20 minutes until lentils are tender.
- Stir in coconut milk and season with salt. Cook for an additional 5 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
- This dahl can be served with rice or naan.
- Leftovers store well in the fridge for up to 3 days.
- You can adjust the thickness by adding more or less broth.
