Instructions
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, dried lavender, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the egg, vanilla extract, lemon zest, and lemon juice to the butter mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- For the filling, beat the softened butter in a medium bowl until creamy. Gradually add the powdered sugar, lemon juice, and vanilla extract, mixing until smooth and fluffy.
- Once the cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.
- Serve immediately or store in an airtight container for up to 5 days.
Notes
- For a floral twist, try adding a teaspoon of honey to the filling.
- You can also substitute the lemon juice with orange juice for a different citrus flavor.
