  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • For the filling:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, dried lavender, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the egg, vanilla extract, lemon zest, and lemon juice to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  8. For the filling, beat the softened butter in a medium bowl until creamy. Gradually add the powdered sugar, lemon juice, and vanilla extract, mixing until smooth and fluffy.
  9. Once the cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to create a sandwich.
  10. Serve immediately or store in an airtight container for up to 5 days.
