Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the chicken by removing the backbone and flattening it.
  3. In a bowl, combine olive oil, lemon juice, lemon zest, thyme, rosemary, garlic, salt, and pepper.
  4. Rub the mixture all over the chicken.
