- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 tablespoon lemon zest
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the chicken by removing the backbone and flattening it.
- In a bowl, combine olive oil, lemon juice, lemon zest, thyme, rosemary, garlic, salt, and pepper.
- Rub the mixture all over the chicken.
- Place the chicken skin side up on a baking sheet.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving.
