Ingredients

  • 1 pie crust
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it on a baking sheet lined with parchment paper.
  3. In a bowl, combine blueberries, sugar, lemon juice, lemon zest, cornstarch, and salt.
  4. Pour the blueberry mixture onto the center of the pie crust, leaving a 2-inch border.
  5. Fold the edges of the pie crust over the blueberries, pleating as necessary.
  6. Beat the egg and brush it over the crust.
  7. Sprinkle coarse sugar on top.
  8. Bake for 35-40 minutes until the crust is golden brown.
  9. Let cool before serving.
