A delicious and easy-to-make Lemon Blueberry Galette that combines the bright flavors of lemon with sweet blueberries.

- 1 pie crust
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and place it on a baking sheet lined with parchment paper.
- In a bowl, combine blueberries, sugar, lemon juice, lemon zest, cornstarch, and salt.
- Pour the blueberry mixture onto the center of the pie crust, leaving a 2-inch border.
- Fold the edges of the pie crust over the blueberries, pleating as necessary.
- Beat the egg and brush it over the crust.
- Sprinkle coarse sugar on top.
- Bake for 35-40 minutes until the crust is golden brown.
- Let cool before serving.
Notes
- Can be served warm or at room temperature.
- Try adding a scoop of vanilla ice cream on top for an extra treat!
