- 4 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
- 1 tablespoon butter
- 1/4 cup diced tomatoes (optional)
- 1/4 cup cooked spinach (optional)
Instructions
- In a mixing bowl, whisk together the eggs, Parmesan cheese, salt, pepper, and parsley until well combined.
- Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
- Pour half of the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes, or until the edges start to lift and the center is set but still slightly soft.
- Carefully flip the egg fold using a spatula and cook for an additional 1-2 minutes until fully cooked. Remove from the skillet and keep warm.
- Repeat steps 3 and 4 with the remaining egg mixture.
- If using, sprinkle diced tomatoes and cooked spinach on one half of each egg fold before folding it over.
- Serve warm, garnished with additional parsley if desired.
Notes
- For a spicier version, add a pinch of red pepper flakes to the egg mixture.
- Substitute the Parmesan cheese with feta or goat cheese for a different flavor profile.
