Ingredients

  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon butter
  • 1/4 cup diced tomatoes (optional)
  • 1/4 cup cooked spinach (optional)

Instructions

  1. In a mixing bowl, whisk together the eggs, Parmesan cheese, salt, pepper, and parsley until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
  3. Pour half of the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes, or until the edges start to lift and the center is set but still slightly soft.
  4. Carefully flip the egg fold using a spatula and cook for an additional 1-2 minutes until fully cooked. Remove from the skillet and keep warm.
  5. Repeat steps 3 and 4 with the remaining egg mixture.
  6. If using, sprinkle diced tomatoes and cooked spinach on one half of each egg fold before folding it over.
  7. Serve warm, garnished with additional parsley if desired.
