Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 package (1 sheet) puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and black pepper. Mix until well combined.
  3. Roll out the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 3-inch squares.
  4. Place about 1 tablespoon of the spinach mixture in the center of each pastry square.
  5. Fold the corners of the pastry over the filling to form a triangle or pocket, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
  6. Place the filled pastry puffs on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.
  8. Allow to cool slightly before serving.
