Description

Keto Tallow-Crisped Carnitas is a flavorful low-carb dish made with tender pork shoulder, seasoned and crisped to perfection.


Ingredients

  • 2 pounds pork shoulder, cut into 2-inch pieces
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 cup beef tallow (or lard)
  • 1/2 cup chicken broth
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large bowl, combine the pork shoulder pieces with salt, black pepper, cumin, smoked paprika, garlic powder, onion powder, and chili powder. Mix well to coat the pork evenly with the spices.
  2. In a large Dutch oven or heavy pot, heat the beef tallow over medium-high heat until melted. Add the seasoned pork shoulder pieces in batches, browning them on all sides for about 5-7 minutes. Remove the browned pork and set aside.
  3. Once all the pork is browned, return it to the pot. Pour in the chicken broth and lime juice, stirring to combine. Bring to a simmer, then cover and reduce the heat to low. Cook for about 2 hours, or until the pork is tender and easily shredded.
  4. Preheat your oven to 400°F (200°C). Once the pork is tender, remove it from the pot and shred it using two forks. Spread the shredded pork evenly on a baking sheet.
  5. Bake in the preheated oven for 15-20 minutes, or until the edges are crispy and golden brown.
  6. Remove from the oven and garnish with chopped cilantro. Serve with lime wedges on the side.

  • For added flavor, consider marinating the pork shoulder in the spice mixture overnight.
  • Serve the carnitas in lettuce wraps or with cauliflower rice for a low-carb meal option.
