- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 cup bell peppers, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 cups cauliflower rice
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the taco seasoning, diced tomatoes, and bell peppers. Cook for an additional 5 minutes.
- In a large baking dish, layer the cauliflower rice, followed by the beef mixture.
- Top with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other low-carb vegetables like zucchini or spinach.
- For a spicier kick, add jalapeños to the beef mixture.
- This casserole can be made ahead of time and reheated.
