  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups cauliflower rice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the taco seasoning, diced tomatoes, and bell peppers. Cook for an additional 5 minutes.
  4. In a large baking dish, layer the cauliflower rice, followed by the beef mixture.
  5. Top with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
