A hearty and low-carb soup that combines the flavors of stuffed peppers in a delicious broth.

- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups beef or chicken broth
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cauliflower rice
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef or turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced green and red bell peppers, cooking for another 3-4 minutes until they start to soften.
- Add the diced tomatoes, broth, Italian seasoning, paprika, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
- Stir in the cauliflower rice and simmer for an additional 5-10 minutes until the cauliflower is tender.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
- For a spicier kick, add a diced jalapeño or a teaspoon of red pepper flakes.
- Substitute the ground meat with shredded chicken or a plant-based meat alternative for a different flavor profile.
