- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- ½ cup granulated erythritol
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup unsweetened shredded coconut
- ½ cup sugar-free chocolate chips
- 2 tablespoons coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine almond flour, cocoa powder, erythritol, baking soda, and salt. Mix well.
- Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until a dough forms.
- Press the dough evenly into the bottom of the prepared baking pan.
- Bake for 15-18 minutes or until set. Remove from the oven and let cool.
- While the base cools, toast the shredded coconut in a dry skillet over medium heat until golden brown, stirring frequently (about 3-5 minutes). Remove from heat and set aside.
- In a small saucepan, melt the sugar-free chocolate chips and coconut oil over low heat, stirring until smooth.
- Once the cookie base has cooled, spread the toasted coconut evenly over the top.
- Drizzle the melted chocolate mixture over the coconut layer.
- Refrigerate the bars for at least 30 minutes to set.
- Once firm, cut into squares and serve.
Notes
- For a richer flavor, add 1 teaspoon of coconut extract to the dough.
- You can substitute the almond flour with coconut flour, but use only ½ cup and increase the liquid slightly to maintain the right consistency.
