- ½ cup granulated erythritol

- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened
- ½ cup granulated erythritol
- 2 large eggs

- ½ cup heavy cream
- ¼ cup sugar-free caramel sauce
- 1 teaspoon sea salt
Instructions
- Preheat the oven to 325°F.
- Grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, combine almond flour, ½ cup erythritol, and salt.
- Stir in the melted butter until the mixture resembles wet sand.
- Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
- Bake for 10-12 minutes or until lightly golden. Remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with ½ cup erythritol until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and heavy cream until fully combined.
- Pour the cheesecake mixture over the cooled crust and spread it evenly.
- Drizzle the sugar-free caramel sauce over the top and use a knife to swirl it into the cheesecake layer.
- Bake for 25-30 minutes or until the edges are set but the center is still slightly jiggly.
- Remove from the oven and let cool at room temperature for about 30 minutes.
- Sprinkle with sea salt before refrigerating for at least 2 hours to set completely.
- Cut into bars and serve chilled.
Notes
- For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the cheesecake mixture.
