Keto Salted Caramel Cheesecake Bars are a delicious low-carb dessert that combines creamy cheesecake with a rich salted caramel flavor, perfect for those following a keto diet.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup granulated erythritol
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup granulated erythritol
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • ¼ cup sugar-free caramel sauce
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 325°F.
  2. Grease an 8×8-inch baking pan or line it with parchment paper.
  3. In a medium bowl, combine almond flour, ½ cup erythritol, and salt.
  4. Stir in the melted butter until the mixture resembles wet sand.
  5. Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
  6. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let cool.
  7. In a large mixing bowl, beat the softened cream cheese with ½ cup erythritol until smooth and creamy.
  8. Add the eggs one at a time, mixing well after each addition.
  9. Stir in the vanilla extract and heavy cream until fully combined.
  10. Pour the cheesecake mixture over the cooled crust and spread it evenly.
  11. Drizzle the sugar-free caramel sauce over the top and use a knife to swirl it into the cheesecake layer.
  12. Bake for 25-30 minutes or until the edges are set but the center is still slightly jiggly.
  13. Remove from the oven and let cool at room temperature for about 30 minutes.
  14. Sprinkle with sea salt before refrigerating for at least 2 hours to set completely.
  15. Cut into bars and serve chilled.

Notes

  • For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the cheesecake mixture.
