- 1 cup coconut milk
- 1/2 cup creamy peanut butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced

- 2 tablespoons red curry paste
- 1 tablespoon soy sauce or coconut aminos
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chicken pieces to the skillet and season with salt, pepper, cumin, coriander, and red pepper flakes (if using). Cook until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the red curry paste and cook for another minute, allowing the flavors to meld.
- Pour in the coconut milk and add the peanut butter, soy sauce (or coconut aminos), and lime juice. Stir well to combine and bring the mixture to a gentle simmer.
- Reduce the heat to low and let the curry simmer for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.

- For a vegetarian option, substitute the chicken with firm tofu or chickpeas. Adjust cooking times accordingly.
