  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce or coconut aminos
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the chicken pieces to the skillet and season with salt, pepper, cumin, coriander, and red pepper flakes (if using). Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Stir in the red curry paste and cook for another minute, allowing the flavors to meld.
  5. Pour in the coconut milk and add the peanut butter, soy sauce (or coconut aminos), and lime juice. Stir well to combine and bring the mixture to a gentle simmer.
  6. Reduce the heat to low and let the curry simmer for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
