Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Add the diced onion and minced garlic to the skillet. Sauté for another 2-3 minutes until the onion is translucent.
  4. Stir in the diced red and green bell peppers, zucchini, cherry tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Cook for an additional 5 minutes until the vegetables are slightly tender.
  5. Transfer the sausage and vegetable mixture to a greased 9×13 inch baking dish.
  6. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.

Notes

  • For a vegetarian option, substitute the Italian sausage with plant-based sausage or omit it entirely and add more vegetables.
