- 2 tablespoons olive oil
- 1 pound Italian sausage (mild or spicy, casings removed)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add the diced onion and minced garlic to the skillet. Sauté for another 2-3 minutes until the onion is translucent.
- Stir in the diced red and green bell peppers, zucchini, cherry tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Cook for an additional 5 minutes until the vegetables are slightly tender.
- Transfer the sausage and vegetable mixture to a greased 9×13 inch baking dish.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
Notes
- For a vegetarian option, substitute the Italian sausage with plant-based sausage or omit it entirely and add more vegetables.
- Add a splash of balsamic vinegar before baking for an extra layer of flavor.
