- ½ cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ cup granulated erythritol or preferred keto sweetener
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup unsweetened coconut flakes
- 1 cup chopped pecans
- 1 cup sugar-free dark chocolate chips
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch pie pan with butter or cooking spray.
- In a mixing bowl, combine almond flour, cocoa powder, salt, and erythritol. Stir in the melted butter and vanilla extract until well combined.
- Add the eggs one at a time, mixing well after each addition until the batter is smooth.
- Pour the batter into the prepared pie pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.
- In a separate bowl, combine coconut flakes, chopped pecans, and sugar-free dark chocolate chips.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the coconut-pecan mixture into the whipped cream until well combined.
- Spread the coconut-pecan topping evenly over the cooled pie.
- Refrigerate the pie for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a richer flavor, add a teaspoon of instant coffee granules to the batter.
- Substitute walnuts for pecans for a different nutty flavor.
