- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or preferred sweetener)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 tablespoons melted coconut oil
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions.
- In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together the eggs, almond milk, vanilla extract, almond extract, and melted coconut oil until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined. The batter should be thick but pourable.
- Lightly grease the waffle maker with cooking spray or additional coconut oil. Pour enough batter into the waffle maker to cover the surface, close the lid, and cook according to the manufacturer’s instructions until golden brown and crispy, usually about 3-5 minutes.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve warm with your favorite keto-friendly toppings, such as sugar-free syrup, whipped cream, or fresh berries.
Notes
- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
