Ingredients

- 2 cups chicken broth
- 2 large eggs
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger (or 1/4 teaspoon ground ginger)
- 1/4 teaspoon white pepper (or to taste)
- 1/4 cup sliced green onions (scallions)
- Salt to taste
Instructions
- In a medium saucepan, bring the chicken broth to a gentle boil over medium heat.
- While the broth is heating, crack the eggs into a small bowl and whisk them until well combined.
- Once the broth is boiling, reduce the heat to low. Slowly pour the whisked eggs into the broth in a thin stream while stirring the broth gently with a fork or chopsticks. This will create the signature egg ribbons.
- Stir in the soy sauce, sesame oil, grated ginger, white pepper, and salt to taste.
- Remove the soup from heat and add the sliced green onions.
- Serve hot and enjoy your delicious keto egg drop soup!
