Ingredients

  • 2 large eggs
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger (or 1/4 teaspoon ground ginger)
  • 1/4 teaspoon white pepper (or to taste)
  • 1/4 cup sliced green onions (scallions)
  • Salt to taste

Instructions

  1. In a medium saucepan, bring the chicken broth to a gentle boil over medium heat.
  2. While the broth is heating, crack the eggs into a small bowl and whisk them until well combined.
  3. Once the broth is boiling, reduce the heat to low. Slowly pour the whisked eggs into the broth in a thin stream while stirring the broth gently with a fork or chopsticks. This will create the signature egg ribbons.
  4. Stir in the soy sauce, sesame oil, grated ginger, white pepper, and salt to taste.
  5. Remove the soup from heat and add the sliced green onions.
