Ingredients

  • 1/4 cup granulated erythritol (or your preferred keto sweetener)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese and erythritol. Beat until smooth and creamy.
  3. Add the egg and vanilla extract to the cream cheese mixture, and mix until well combined.
  4. In a separate bowl, whisk together the almond flour, baking powder, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each cookie slightly with the back of a fork or your fingers.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
