- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese and erythritol. Beat until smooth and creamy.
- Add the egg and vanilla extract to the cream cheese mixture, and mix until well combined.
- In a separate bowl, whisk together the almond flour, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a fork or your fingers.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

- For added flavor, consider mixing in sugar-free chocolate chips or chopped nuts into the dough before baking.
- You can also drizzle melted dark chocolate over the cooled cookies for a decadent touch.
