- 1/2 cup unsweetened cocoa powder
- 1/2 cup heavy cream
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a blender or food processor, combine the cottage cheese, unsweetened cocoa powder, powdered erythritol, vanilla extract, and salt. Blend until smooth and creamy, scraping down the sides as needed.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate cottage cheese mixture until fully combined. Be careful not to deflate the whipped cream.
- Spoon the mousse into serving dishes and refrigerate for at least 1 hour to allow it to set.
- Serve chilled, garnished with a sprinkle of cocoa powder or a few berries if desired.
Notes
- For a richer flavor, add a tablespoon of instant coffee granules to the mixture before blending.
- You can substitute the cottage cheese with Greek yogurt for a different texture and flavor, keeping in mind that it may alter the nutritional values.
