Description

Karpatska is a traditional Polish dessert that features layers of cream and pastry, inspired by the Carpathian Mountains.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter (2 sticks)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1 teaspoon powdered sugar (for dusting)
  • 1 tablespoon cocoa powder (for dusting, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a 9×13 inch baking dish with parchment paper.
  2. In a saucepan, combine the water, butter, and salt, and bring to a rolling boil over medium heat.
  3. Once boiling, remove from heat and mix in the flour until a cohesive dough forms.
  4. Return to low heat and cook for an additional 1-2 minutes, stirring until the dough separates from the sides of the pan.
  5. Let the dough cool for about 5 minutes, then incorporate the eggs one at a time, mixing well after each addition.
  6. Mix in the vanilla extract until the dough is smooth and shiny.
  7. Split the dough into two equal portions and spread one half into the prepared baking dish.
  8. Bake for 25-30 minutes, or until golden and puffed. Repeat with the second half of the dough.
  9. While the layers are baking, whip the heavy cream until soft peaks form, then gradually mix in the granulated sugar until stiff peaks are achieved.
  10. Once the layers are baked and cooled, lift them from the pans and place one layer on a serving plate.
  11. Spread the whipped cream over the top of the first layer, then place the second layer on top.
  12. Dust the top with powdered sugar and cocoa powder if desired.
  13. Refrigerate for a minimum of 2 hours before serving.

  • Ensure the layers are completely cooled before assembling the cake.
  • For best results, refrigerate the cake to allow the flavors to meld.
