Description
Karpatska is a traditional Polish dessert that features layers of cream and pastry, inspired by the Carpathian Mountains.
Ingredients

- 2 cups all-purpose flour
- 1 cup unsalted butter (2 sticks)
- 1 cup water
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar
- 2 cups heavy whipping cream
- 1 teaspoon powdered sugar (for dusting)
- 1 tablespoon cocoa powder (for dusting, optional)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a 9×13 inch baking dish with parchment paper.
- In a saucepan, combine the water, butter, and salt, and bring to a rolling boil over medium heat.
- Once boiling, remove from heat and mix in the flour until a cohesive dough forms.
- Return to low heat and cook for an additional 1-2 minutes, stirring until the dough separates from the sides of the pan.
- Let the dough cool for about 5 minutes, then incorporate the eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract until the dough is smooth and shiny.
- Split the dough into two equal portions and spread one half into the prepared baking dish.
- Bake for 25-30 minutes, or until golden and puffed. Repeat with the second half of the dough.
- While the layers are baking, whip the heavy cream until soft peaks form, then gradually mix in the granulated sugar until stiff peaks are achieved.
- Once the layers are baked and cooled, lift them from the pans and place one layer on a serving plate.
- Spread the whipped cream over the top of the first layer, then place the second layer on top.
- Dust the top with powdered sugar and cocoa powder if desired.
- Refrigerate for a minimum of 2 hours before serving.
Notes
- Ensure the layers are completely cooled before assembling the cake.
- For best results, refrigerate the cake to allow the flavors to meld.
