- 1 pound jumbo lump crab meat, picked over for shells
- 1 pre-made pie crust (9-inch)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F.
- In a large skillet, melt the butter over medium heat.
- Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender.
- Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for an additional 2 minutes, stirring constantly.
- Gradually whisk in the chicken broth and heavy cream. Bring the mixture to a simmer, stirring frequently until it thickens, about 3-5 minutes.
- Stir in the Dijon mustard, Old Bay seasoning, salt, and pepper.
- Gently fold in the crab meat and frozen peas. Remove from heat and let cool slightly.
- Pour the crab mixture into the pie crust, spreading it evenly.
- Cover with the top crust, sealing the edges. Cut a few slits in the top crust to allow steam to escape.
- Brush the top with the beaten egg.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Let cool for 10 minutes before serving.
