  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender.
  4. Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for an additional 2 minutes, stirring constantly.
  5. Gradually whisk in the chicken broth and heavy cream. Bring the mixture to a simmer, stirring frequently until it thickens, about 3-5 minutes.
  6. Stir in the Dijon mustard, Old Bay seasoning, salt, and pepper.
  7. Gently fold in the crab meat and frozen peas. Remove from heat and let cool slightly.
  8. Pour the crab mixture into the pie crust, spreading it evenly.
  9. Cover with the top crust, sealing the edges. Cut a few slits in the top crust to allow steam to escape.
