  • 1 cup fresh peaches, diced (about 2 medium peaches)
  • 1 medium jalapeño, finely chopped (seeds removed for less heat)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large bowl, combine the diced peaches, chopped jalapeño, honey, soy sauce, olive oil, minced garlic, ground cumin, smoked paprika, salt, black pepper, and lime juice. Mix well to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and let any excess marinade drip off.
  4. Grill the chicken thighs for about 6-7 minutes per side, or until they reach an internal temperature of 165°F and have nice grill marks.
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
