  • 1/2 cup milk
  • 1/4 cup peach preserves
  • 1/4 cup powdered sugar (for dusting)
  • Red and yellow food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Once cooled, use a small spoon to create a small indentation in the center of each cookie. Fill the indentation with peach preserves.
  9. If desired, mix a few drops of red and yellow food coloring into the remaining peach preserves to create a peachy color and drizzle over the cookies.
  10. Dust the cookies with powdered sugar before serving.
